American restaurateurs
shamelessly slap the term "bistro" on everything
from awful chain outlets to places with $55 entrees. The
French reserve the term for modest neighborhood spots like
Petit Robert Bistro that unpretentiously serve delicious,
relatively simple meals at workingman's prices. "Little
Bob's" hits the bistro bull's-eye squarely with fine
traditional Parisian fare, brusque but professional service,
and nary an entrée over $20. C'est le luxe sans le luxe.

Culinaire
Beurre
manié
Mélange de beurre ramolli et
de farine.
Beurre
noisette
Etat du beurre mis à chauffer,
entre le moment de l'ébullition et le début de la coloration. A
ce stade, sa couleur et son odeur rappellent la noisette grillée.
Bisque
Coulis de crustacés additionné de crème fraîche servi comme
potage.
Bouquet
garni
Généralement, un petit bouquet composé de thym, laurier, persil,
gousse d'ail pelée et écrasée, le tout attaché avec une
ficelle. Il faut retirer le bouquet garni à la fin de la cuisson
pour servir les aliments.

Lentil Cake
This
is a dish that Jacky Robert perfected from one of his
colleague's ideas .
There
are more and more people eating vegetarian and Petit
Robert always features unique items to please them. We
have also found that meat eaters, once in a while treat
themselves to the lentil cake since it is very substantial
and satisfying during the cold days of winter.

Region of Savoie is known for the cheese Roblochon
and the Arctic Char from the Lake of Annecy. Monday

Not only our long time Burgerdog roller and a retired
Cuban cigar roller (joke), Joel is one of the nicest
employee. Born in Guatemala, Joel has become an
indispensable link of our food chain and service. He is
the man behind the Escargots, Soup du Jour and Shallot
