Concept

Many
restaurants nowadays refer to themselves as bistros,
despite the fact that their food, ambiance and
prices are at odds with the true definition of the
term. In France, a bistro is where blue collar
workers go to eat homestyle fare at very modest
prices; it is often served on bare wood or with
draught beer and vin ordinaire.
Daily
blackboard specials are prepared by Chef Jacky
Robert, whose career and reputation are well-known
to both Boston and west coast diners. Manager Loic
Le Garrec is a native of Brittany and a veteran of
Boston and New York's top dining rooms.
In true bistro
tradition, entree prices are under $12 at lunch and
under $20 at dinner (unchanged prices since opening
April 1st, 2005)

Two
French sisters, Caroline (1847-1911) and
Stépainie Tatin (1838-1917), created the
tart. The sisters lived in Lamotte-Beuvron,
a small rural town in the Loire Valley of
France,where they owned and ran the hotel
called l'Hotel Tatin in 1888. The elder
sister, Stéphanie, dealt with the kitchen.
She was a particularly fine cook but was not
the brightest of people. Her specialty was
an apple tart, served perfectly crusty,
caramelized and which melted in the mouth.
One day during the hunting season, during
the midday scramble, Stephanie placed her
tart in the oven the wrong way round. The
pastry and apples were upside-down but,
nevertheless, she served this strange
dessert without giving it time to cool. The
French call this dessert tarte des
demoiselles Tatin (the tart of two unmarried
women named Tatin)

Julie
& Julia
Just out, a great movie about Julia Child,
the friend of all chefs. PRB Chef-Owner
Jacky Robert recalls her joie de vivre, and
her ability to make others around her feel
good. Once, Julia asked Jacky why his
Tarte Fine tasted so good. "I
brushed it liberally with butter,"
replied Jacky. Then, in her inimitable
voice, she said "But of course !".
Julia also called it as she saw it.
Another time, Julia's reaction to Jacky's
Roasted Rabbit with Salt Cod Purée was a
succinct: "What a silly
dish."

Normandie
Chef
Robert's birthplace, Normandy, is a land
of apples, Calvados and butter, but it is
also famous for Andouille. Years
ago, returning from a trip
"home" to France with his young
daughter Iris in tow, Jacky smuggled some
of that sausage in his luggage. When
asked by the U.S. Customs agent if he had
any foodstuffs to declare, he said no, but
Iris piped up: "Daddy, isn't
Andouille food ?".

Chef Zoltan Kosa
Zoltan Kosa is our
chef at the South End location.
Before working for PRB, he was the chef de
cuisine at Pigalle, cooked at Harvest and at
the famous Stonehedge Inn . Zoltan is one of
our most dedicated employee. He loves when
people come to the kitchen to say how are you
in Hungarian (hogy vagy?)
