American
restaurateurs shamelessly slap the term
"bistro" on everything from awful
chain outlets to places with $55 entrees. The
French reserve the term for modest neighborhood
spots like Petit Robert Bistro that
unpretentiously serve delicious, relatively
simple meals at workingman's prices.
"Little Bob's" hits the bistro
bull's-eye squarely with fine traditional
Parisian fare, brusque but professional service,
and nary an entrée over $20. C'est le luxe sans
le luxe.

Déglacer
(Pour water, wine or vegetable juice, into a rosting
pan to delute the glaze left from meat) Verser
un peu d'eau au fond d'une poêle ou d'un plat encore
chaud où vient de cuire une viande par exemple,
remuer et récupérer le jus ainsi obtenu pour
accompagner le plat. On peu également déglacer avec
de la crème, du vin, du bouillon, du jus de citron,
selon l'aliment. Le déglaçage permet de dissoudre
les sucs de cuisson afin d'en faire une sauce
d'accompagnement particulièrement goûtue.

des Rois, January 2, 2011 |
The French tradition of serving a
frangipane-filled tart known as the ' galette
des rois' (or the gateau
des rois in the South of France) on or
around January 8, (the first Sunday of each
New Year) dates back to the 14th century.
The festival takes place around Epiphany,
the twelfth day of Christmas, when the wise
men visited baby Jesus. According to
tradition, the 'galette des rois', was to
"draw the kings" to the Epiphany.
During the French Revolution, the name was
replaced with 'Gâteau de l'Égalité'
(Equality cake), as the word 'king' was
hardly in fashion!
