American
restaurateurs shamelessly slap the term
"bistro" on everything from awful
chain outlets to places with $55 entrees. The
French reserve the term for modest neighborhood
spots like Petit Robert Bistro that
unpretentiously serve delicious, relatively
simple meals at workingman's prices.
"Little Bob's" hits the bistro
bull's-eye squarely with fine traditional
Parisian fare, brusque but professional service,
and nary an entrée over $20. C'est le luxe sans
le luxe.

Stripped
Bass In a Crust of Salt
For
Valentine's Day, it is our custom to serve
as a special an entree to be shared by two
people. The Bass en Croute is very
delicious. It is cooked with spinach in
the middle and with the scales on. The
scales act as a filter against the salt
and once cooked, the scales melt and stick
to the crust, making it easy to remove the
meat from the fish.

"Chez Jacky "
Service
Familial, Cuisine convivial and
Shared
Nouvelle Cuisine in the 70's got
chefs to serve food on plates. Jacky was
then the executive in the famous Ernie's
kitchen in San Francisco. He remembers how
hard it was to convince his boss that
plating the food in the kitchen was the
thing to do. Everything was served on trays
then. For fine dining restaurants, the
Maitre D' dished the food from silver trays,
on gueridon, tableside. For less expensive
restaurants and bistros, food was simply put
on the table, on cheap serving trays or by
service "a l'anglaise" to get. At
"Chez
Jacky" in Brighton, we will be
bringing back this homey way of serving
food.
Opening is planned for March.

Helping
Haiti
Our monthly French dinner at Petit Robert
Bistro in Kenmore Square, Boston, will raise
money for earthquake relief in Haiti. For a
$50 donation minimum per person participants
receive a French three course dinner at Petit
Robert Bistro, Kenmore Square and an aperitif.
Those guests who wish to donate more than the
$50 minimum are welcome to do so. 100% of
proceeds from the dinner will be donated to Partners
in Health on behalf of Petit Robert Bistro
and the French Library Alliance Francaise of
Boston. For reservations, call: 617 375 0699
The Dinner will be prepared by Anna Fils-Ainne,
our Needham chef who's husband is a native of
Haiti. For

Estienne is Monsieur Fromage
Estienne Berquez, was born in Calais, in the
North of France. He is a professional
server. He is in charge of our cheese
selection at the Columbus location. One of the
duty for someone who learns the dining room in
France is to take care of cheeses...In France
we serve cheese at the end of the meal and
before dessert. It is a fine way to finish the
red wine you have been drinking with the
preceding course. At PRB, we sell cheese by
the cut at $2.75 per cut. The selection is
classic but requires attention when you
consider that France has 350 distinct cheeses.
As General Degaule said: "Comment
voulez-vous gouverner un pays qui a deux cent
quarante-six variétés de fromage?"

It is said that there are 365 cheeses in
France, one for each day.

region of Jura.
