American
restaurateurs shamelessly slap the term
"bistro" on everything from awful
chain outlets to places with $55 entrees. The
French reserve the term for modest neighborhood
spots like Petit Robert Bistro that
unpretentiously serve delicious, relatively
simple meals at workingman's prices.
"Little Bob's" hits the bistro
bull's-eye squarely with fine traditional
Parisian fare, brusque but professional service,
and nary an entrée over $20. C'est le luxe sans
le luxe.

Bain-Marie
Faire cuire de manière
douce des aliments contenus dans un plat, lui même
posé dans un récipient (casserole par exemple) d'eau
bouillante.
Barder
Entourer de lard un
morceau de viande. Cela permet de réduire le dessèchement
des aliments lors de la cuisson.

clarifié
Beurre fondu dont on a retiré l'écume et que l'on a
débarrassé de son dépôt blanchâtre.

Bûche de Noël
After
the Midnight Mass, on Christmas eve, French
people feast with good wines, Turkey and
This Chistmas Log.
One
of the famous stories behind this French
dessert is that the great Napoleon Bonaparte
of France issued a proclamation stating houses
in Paris to keep their chimneys closed during
the winter because of the cool air that caused
medical problems. This prohibited Parisians to
use their fireplaces. But ingenious French
bakers then invented this dessert as a
symbolic substitution around which the family
could gather for story-telling and other
holiday happiness.

KIDS
ARE WISER
A few days after Christmas, my six year son
and I were talking. He asked, "Mom, is
there a Santa Claus?"
"What do you think?" I asked him.
He replied, "Well, my Playstation that
I got and my gift from Santa were wrapped in
the same kind of paper." He thought for
a minute and said, "I'll tell you what
... you and Dad can go on buying me presents
and let's just forget we ever had this
talk!"

VICEVERSAH
James is one of
our best servers here at Petit Robert. A
childhood friend of Chef Jacky's daughter
Iris, he has been serving at PRB for over
three years. However, outside of the Bistro's
walls he is known as VICEVERSAH, a rapper who
has performed at many premier venues in the
Northeast and released four albums. His most
recent project is called The Northern Lights
